salty sweet

While rebuilding this website and archiving all those old blog stories, I came across this one of October 2015. Still as good as ever, they came out just the same in my new-old kitchen. Perhaps I will reduce the sugar a little next time. Hmm, I’ll need to make another batch to try that. Perhaps you should too. Here’s the original post:

“Cool evenings, time to start the oven. A peanut butter cookie jag is underway…  consolation for lost summer days & fading light.

• 1 1/4 cups unbleached flour

• 3/4 teas baking soda

• 1/2 teas baking powder

• 1/4 teas salt

• 1/2 cup butter

• 1/2 cup smooth peanut butter, all natural

• 1 cup sugar

• 1 large humane egg

• 1 teas vanilla extract

Preheat oven to 375˚. Wisk together flour, baking soda, baking powder, & salt. In a separate bowl, cream together butter & peanut butter, then add sugar. Incorporate egg & vanilla. Stir in dry ingredients, blend together. Roll out 1″ balls and smash with a floured fork on ungreased sheets.  Bake 10-12 minutes, or until golden brown at the edges. Cool on wire racks (adapted from a dogeared Ladies Home Journal circa 1970 something).
